It's interesting how trends in this country trickle down from huge cities such as New York City to a midsize metropolis like Pittsburgh (which seems to get trends about a year later) and finally to small cities with a handful of high-rises. In my hometown of Rochester, New York, where craft brewing has just started to really take hold, CB Brewing Company has been bucking the trend and rockin' out some amazing craft beers since 1997.

Recently, a news outlet in England featured a story on how British researchers are "creating designer genomes that can be inserted into yeast cells to create new strains," with an ultimate goal of creating bacterium genes "from the ground up." What does this means for you and me, the everyday hop fiend?

After traveling the world searching for the best life had to offer, a group of friends returned home to Dallas, TX, and opened a restaurant in one of the city's most diverse and eclectic neighborhoods. Former bloggers turned restaurant owners Bryan Kaeser and Joe Scribner have shifted their passion from the pen to the pint in their mission to provide Dallas with one of the most inventive and thoughtful craft beer and comfort food establishments - Dallas Beer Kitchen.

The New Hampshire craft beer scene has been growing insanely as of late, which means there are now a lot of new and cutting-edge breweries turning out some great beer. And one of those is Throwback Brewery. Nicole Carrier and Annette Lee helm Throwback and they've got some lofty goals for the future. Here's what I found out when I caught up with Nicole and chatted with her about brewing in the Granite State and what's in store for them...

We blame the industry for this... It used to be that when we wrapped up our Weekend Picks on Friday, we could coast through the weekend.
