NFL Wild Card Playoffs “Cooking With Beer” – Founders Pimento Cheese Spread

Festive foods take on new meaning when made with serious beer. And who doesn’t enjoy a snackable pimento cheese spread, when you’re rooting for your favorite football team this weekend?

This tasty recipe comes from Founders Brewing whose original brewery and taproom is nestled in downtown Grand Rapids, Michigan. The original recipe was made with the brewery’s PC Pils (see above) which has been discontinued. So we substituted Founders Solid Gold, a 4.4% ABV Premium Lager that is excellent and widely available year-round.

This delicious pimento cheese spread is easy to make and perfect for cold weather entertaining. And nothing pairs better with playoff football, than a well-crafted lager (or two).

So let’s do this!

Founders Solid Gold Premium Lager Pimento Cheese Spread

Ingredients

A white and gold can of Founders Solid Gold Premium Lage1 lb sharp orange cheddar cheese

1- 4-ounce jar diced pimentos, drained

2 garlic cloves

1 tablespoon Worcestershire sauce

½ teaspoon kosher salt

1 teaspoon smoked paprika

2 teaspoons hot sauce

½ cup PC Pils

 

Directions

Step 1

Cut the cheese into small chunks and put into the bowl of a food processor.

Step 2

Add the garlic, Worcestershire sauce, salt, paprika, and hot sauce to taste and process just until it starts to break up and form a paste.

Step 3

Scrape down the sides of the bowl, then start the food processor and drizzle in ½ cup of Solid Gold Premium Lager, and incorporate the pimentos until the mixture is smooth and creamy.

Step 4

Scrape the beer cheese into a container, cover, and refrigerate for 2 hours, or until the cheese is firm and the flavors have melded.

Step 5

Serve cold The beer cheese will keep, covered, in the refrigerator for one week
