Holiday Cooking With Beer – Founders Hazy IPA Cheese Dip
Festive foods take on new meaning when made with serious beer. And who doesn’t like cheese dip, especially cheese dip made with the right beer and New Year’s Eve approaching?
This tasty recipe comes from Founders Brewing whose brewery and taproom is nestled in downtown Grand Rapids, Michigan. And although the original recipe used Founder’s Centennial IPA, we substituted the brewery’s Mortal Bloom IPA, a 6.2% ABV Hazy India Pale Ale with intense citrus and tropical notes of pineapple and mango, that compliment the dip nicely.
The original recipe also used Founders Dirty Bastard Stone Ground Mustard which is no longer available but any half-mix of any sturdy yellow and a brown mustard will get the job done.

Founders Mortal Bloom Cheese Dip
Ingredients
1 (8 ounce) block cream cheese
2 ounces grated smoked Gouda cheese
1/2 cup Centennial IPA
Handful of spinach (cut in tiny strips)
1/2 small red bell pepper (diced very tiny)
1 clove of garlic (minced)
1 tablespoon stone ground mustard
1 tablespoon Italian seasoning
Directions
Step 1
Preheat oven to 375 degrees.
Step 2
Combine all ingredients and bake for 35-45 minutes, stirring halfway though.
Step 3
Broil the dip for 5 minutes for additional crust/color on top.
Step 4
Serve with artisan bread that we also toasted in the broiler.
