  • 1-2 cups beef broth
  • 2 sprigs of fresh thyme for use (or 1 teaspoon of dried)
  • 1-2 bay leaves
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Optionally, add in 1 tablespoon brown Sugar or honey to taste and garnish with fresh parsley.

These ingredients create a hearty, flavorful dish. Adjust the best beer type for your preference. Stout gives deeper, roasted notes.

Step-Step Guide to Beer-Braised Short Ribs in a Countertop Oven

This method uses simple steps. A countertop oven makes braising reliable and hands-off.

Step 1: Prepare and Sear the Short Ribs

Dry the meat side of the short ribs using kitchen paper towels. Sprinkle on the short ribs, generously. If possible, allow short ribs to sit 20-30 minutes at room temperature prior to cooking. Heat the pan over medium-high heat on a stove top, and brush on the oil. Fry all sides until good browning – about 3-4 minutes – is even, though ribs are not too crowded over the meat. During the searing of meat, flavor is enhanced with the help of the Maillard reaction. After perfect cooking of the ribs, set them aside. The process of not searing the short ribs reduces their flavor profile; hence, it is necessary. 

Step 2: Sauté the Vegetables.

Reduce heat to medium in the same skillet. Stir in the onion, carrots, and celery and cook until onions are just tender but still firm, about 5-7 minutes. Add the garlic and sauté for 1 minute. Add the tomato paste and cook, stirring, for 1-2 more minutes. Then we will make a roux using flour. 

Step 3: Build the Braising Liquid

Slowly pour the beer – it will create bubbles. Scrape all the fonds off the bottom of the pan. Add beef stock and Worcestershire separately; take care with the sugar, which isn’t in the recipe, and add as necessary. Allow to simmer for a few minutes, adding seasoning as needed. 

Step 4: Putting Your Dish in the Countertop Oven

Combine all ingredients in a pan, either with short ribs or in a heatproof baking dish that will fit in the Dutch oven. Submerge the meat and vegetables – about halfway up the ribs. If necessary, add a little more beef stock for better coverage. Tightly cover the dish with a lid or aluminum foil. Set the temperature for roast or bake mode.

Step 5: Bake to Perfection

If you have an oven with this accessory placed in the fatter parts of the rib, but not the bone. The inside temperature should be approximately 200-205° to prepare a tender, yummy short rib. On low heat, cook in a covered container for 2.5-3 hours. Most of the meat will fall off at 2 hours, and will be tender. If you want the sauce to be a bit darker, open it and cook for an additional 20-30 minutes, after 2 hours.

Step 6: Rest and Make the Sauce (Optional)

Take ribs off and leave under loose foil for 10-15mins. Drain the fat off the sauce. If the sauce seems too thin, let it cook a little longer on the stovetop or use the keep warm/reduce setting in the oven until it thickens. Strain the gravy if you want a smoother texture, or leave the vegetables in for a heartier sauce. You can also blend part of it if you prefer it partially smooth.

Serving Suggestions

Serve the beer-braised short ribs over creamy mashed potatoes, polenta, or buttered egg noodles, to mop the delightful sauce up. Roasted root vegetables. The rich dish is complemented by a simple green salad. Serve garnished with freshly chopped parsley and thyme. Meanwhile, brew up a side that goes well with the meal, while in the kitchen. Also perfect for making ahead – these flavors are even better the next day.
