Cooking With Beer – Best Milk Stout Brownies

Festive foods take on new meaning when made with serious beer, like these delicious chocolate brownies that are made even moister with the addition of a classic Milk Stout.

This tasty recipe comes our way from Odell Brewing out in Colorado and it uses the brewery’s Lugene Chocolate Milk Stout an 8.5% ABV uber-limited release with a rich and creamy character reminiscent of a cold glass of chocolate milk.

Incredibly easy to make, these scrumptious brownies will make you look like a cooking god!

And this Milk Stout really adds something special.

So let’s do this!

Ingredients

1 C Lugene Milk Stout

5oz (about 1 cup) Chocolate Chips (a mix of milk & dark works), but you could really use any kind)

3/4 C Unsalted Butter (1 1/2 sticks)

1 Tsp Vanilla

1 C Brown Sugar

1 C Flour

1/2 C Cocoa powder

2 Eggs

 

Instructions:

Preheat the oven to 325°F.

Open a bottle of Lugene and measure out 1 cup. (Bonus: enjoy the extra few ounces while baking!)

Set the beer aside to flatten slightly.

Prepare a double boiler: Fill a pot about ¼ full with water and place it over medium heat.

Cut the butter into ½-tablespoon chunks.

Melt the chocolate and butter: In a glass bowl that fits over the pot, combine the butter and chocolate chips. Stir until fully melted.

Remove the bowl carefully from the pot using oven mitts.

Add sugar: Using a hand mixer or whisk, beat the sugar into the melted mixture.

Whisk the eggs in a small bowl.

Temper the eggs: Slowly add them to the warm chocolate mixture while whisking constantly.

Mix in the vanilla and cocoa powder.

Stir in the cup of Lugene beer.

Beat the batter on medium-high for about 1 minute to activate the carbonation (this helps create a lighter, cake-like texture).

Whisk in the flour until smooth.

Pour the batter into a lightly greased baking pan.

Bake for about 20 minutes, or until a toothpick inserted in the center comes out clean.

Cool slightly before slicing and serving.
