Cooking with Beer – Fresh Squeezed IPA Sorbet
Festive foods take on new meaning when made with serious beer. And who doesn’t enjoy a tangy dish of citrusy sorbet, especially when it’s are with the perfect India Pale Ale?
And although the recipe calls for any IPA, we went with the Deschutes Brewery’s Fresh Squeezed IPA a terrific 6.4% ABV India Pale Ale that’s loaded with citrusy Citra and Mosaic hops that are guaranteed to lend bright tropical tones to your sorbet.
The beer’s resonant citrus tones work deftly with this wonderful recipe, and with summer’s arrival this tasty treat will always be welcome.
So let’s do this!
Fresh Squeezed IPA Sorbet
Ingredients:
- 1 cup water
- ½ cup sugar
- 1 cup fresh orange juice
- ½ cup lemon juice
- Zest of 1 orange
- 1 cup citrus-forward IPA
Instructions:
- Heat water and sugar in a saucepan until sugar dissolves. Let cool.
- Mix in citrus juices, zest, and IPA.
- Chill in the fridge for 2–3 hours.
- Freeze in an ice cream maker according to the manufacturer’s instructions, or freeze in a shallow container, stirring every 30 minutes until set.
