Celebrate Thanksgiving and the winter holidays with one of the best “Cooking with Beer” recipes we’ve ever shared.
This one comes our way from Petaluma, California-based Lagunitas Brewing and it uses the brewery’s delicious winter seasonal, Unrefined Shugga’, a 10% ABV Strong Ale that’s crafted with authentic whole cane sugar.
And even better Unrefined Shugga’ is prominently featured in every single stage of this death-by-chocolate extravaganza so it’s time to throw out the pumpkin pie and get a little more unrefined. this holiday season.
Lagunitas Unrefined Chocolate Cake
• 3 cups all-purpose flour
• 4 cups sugar
• 1 ¾ cups cocoa powder
• 4 tsp baking powder
• 2.5 tsp baking soda
• 2 tsp salt
• 2 cups buttermilk
• 1 cup vegetable oil
• 10 oz Lagunitas Unrefined Shugga’
• 2 generous shakes of vanilla extract (measure with your heart)
• 4 whole eggs
Okay let’s do this…
Combine all dry ingredients in a medium bowl. Blend thoroughly using a whisk or spatula. In a separate bowl, combine all wet ingredients, making sure to thoroughly blend the eggs with the rest of the wet ingredients. Last, but far from least, add your Unrefined Shugga’, whisking to incorporate.
Combine wet and dry ingredients, and whisk until smooth and glossy.
Bake at 350 degrees Fahrenheit for about 45 min. Lagunitas recommend using a spring-form pan so you have a fighting chance of popping your cake out in one piece when it’s done baking.
(Pro tip: Use a wooden skewer or toothpick to poke the center of the cake. When the skewer comes out clean with no batter on it, the cake is done.)
And while you’re waiting for the cake to cool it’s time to celebrate your cooking skills by finishing off what’s left of Unrefined Shugga’ and maybe opening another.
