Festive foods take on new meaning when made with serious craft beer. And who doesn’t like braised sausages and beer?
This tasty recipe comes our way from Guinness and it uses the brewery’s Baltimore Blonde, a light and citrusy 5% ABV Ale that is only produced at Guinness Open Gate Brewery in Maryland
These sausage rolls are easy to make, party-proven, and the beer really adds something essential.
So let’s do this!
Guinness Baltimore Blonde Sausage Rolls
Ingredients
8 Fresh Bratwursts
2 bottles of Guinness Baltimore Blonde
1 Onion, quartered
½ Teaspoon Salt
¼ teaspoon pepper
8 pretzel rolls
½ cup cherry tomatoes, quartered with stem attached
Directions
- Preheat grill to high heat. Bring Guinness Blonde to a simmer with sliced onions, salt and pepper.
- Add in fresh brats and simmer for 10-15 minutes, turning once, or until cooked through.
- Reserve 1 cup of beer base and set aside onions.
- Char sausages on grill to add color and texture, 5-6 minutes.
- Char each quarter of beer braised onions until deep color forms. Slice off stem and chop.
- Toss onions with cherry tomatoes, apple cider vinegar and season to taste.

Creamy Spicy Stout Mustard
Ingredients
1-2 tablespoons reserved beer cooking liquid
1-2 Tablespoon pickled jalapenos, chopped
½ cup stone ground mustard
1 tablespoon mayonnaise
Directions
- Mix beer cooking liquid, pickled jalapenos, stone ground mustard and mayonnaise all together in a bowl.
- Adjust thickness with more braising liquid if necessary.
