, Cooking With Beer: India Pale Ale Pork Chops With Pineapple Salsa

Festive foods take on new meaning when made with serious beer. And who doesn’t like grilled pork chops, especially when they’re marinated in the right India Pale Ale and topped with an “intoxicating” salsa?

This tasty recipe comes our way from Sierra Nevada Brewing and it’s made the brewery’s Liquid Hoppiness IPA, a super-flavorful 7% ABV India Pale Ale with bright  fruity notes of pineapple, grapefruit, orange and fresh berries that really compliment this tasty dish.

Top your grilled pork chops with a sweet and spicy pineapple salsa, it is ON!

(Chef’s Tip: If you’re unable to find Liquid Hoppiness which is a seasonal, we suggest that you substitute Sierra Nevada Dankful IPA which is available all year-round)

Ingredients

1 cup Sierra Nevada IPA

1/3 cup soy sauce

1-inch piece of ginger, peeled and grated

3 cloves of garlic, peeled and crushed

2 tablespoons brown sugar

4 bone-in pork chops, 1-inch thick

Directions

Step 1

Whisk together Liquid Hoppiness, soy sauce, ginger, garlic and brown sugar.

Step 2

Place pork in a baking dish or heavy-duty zip-top bag. Pour marinade over the meat and refrigerate overnight, turning once.

Step 3

Remove pork chops from refrigerator and prepare a grill for direct and indirect heat. Sear pork chops over direct heat for 2–3 minutes per side. Move to indirect heat, cover, and cook until an instant-read thermometer hits 145°F, about 12–15 minutes.

Step 4

Let rest for 10 minutes and serve topped with pineapple salsa.

Fresh Pineapple Salsa

Ingredients

1/4 red onion, finely diced

1/2 red bell pepper, diced

1 jalapeño pepper, minced

1/2 lime, juiced

 

Directions

Step 1

Combine ingredients in a mixing bowl and season to taste with salt and pepper.
