Cooking With Beer – Sweet Raspberry Wheat Ale Popsicles

Festive foods take on new meaning when made with serious beer. And who doesn’t enjoy a fruity popsicle with temperatures soaring this summer. Especially when that popsicle is made with the right fruit beer.
And although this recipe might work with a wide range of fruit-forward beers, we went with Founders Rubaeus, a stunning 5.7% ABV berry-red Wheat Ale with an intense fresh red raspberry flavor, that we think is one of the best beers that the Grand Rapids, Michigan-based brewery makes.
Obviously, you’ll want to have popsicle molds on hand before starting, but they’re cheap and readily available at Amazon, but we do suggest you go with silicon molds, they’re just so much better.
So let’s do this!
Founders Rubaeus Popsicles
Ingredients:
- 1/4 cup water
- 1/4 cup granulated sugar
- 2 cups mixed berried, thawed if frozen
- 1 cup Rubaeus
Instructions:
- In a small saucepan, bring the water, sugar and rosemary sprig to a simmer. Cook until the sugar is completely dissolved, about 2-3 minutes. Then remove the saucepan from the heat and allow the simple syrup to cool to room temperature. Once cooled, remove and discard the rosemary sprig.
- Add the cooled simple syrup, berries and Rubaeus to your blender. Blend on high until smooth. Then divide the mixture evenly between your popsicle molds, filling each mold about three-quarters of the way full. Insert popsicle sticks and place your molds into your freezer.
- Freeze until the popsicles are completely firm, 6-8 hours.
- Once completely frozen, you can remove the popsicles and enjoy a Rubaeus Popsicle!
