Wild Times Coming Soon To BrewDog’s Overworks

Although BrewDog’s Overworks mixed culture sour facility in Scotland is not yet 100%, things are definitely coming together. And they expect to get their ‘temple to the art of aging,’ up and running soon…

Here’s where they’re at…

The Overworks compound itself has been completed…they’ve walls, thank god, as well as a roof.

Ten 50HL Italian foudres and eight 100HL foudres are all in place and will soon be home to more than eight wild cultures nurtured by  ex-Wicked Weed’s, Richard Kilcullen, who moved to Scotland to helm BrewDog’s wild vision.

Next to the Overworks family of giant foudres, they’ve added an army of Spanish Rioja barrels which will serve as  the compound’s workhorses as BrewDog dives deeper into alternative fermentation and blending and unleash their own wild beer creations on the world.

The Overworks lab is still a work in progress…but it’s getting there…and their very own 50HL coolship (an open-air fermentation vessel) is already in place.

Meanwhile Kilcullen is actively working to harness some of Ellon, Scotland’s windblown flora so he can get a jump on things and begin producing Overworks Lambic-style sours.

 And with the weather getting colder the conditions are becoming optimal for the magic to happen.

Finally (and we love this part), team BrewDog will be transporting the wort they generate at their primary 100HL brewery to the Overworks facility via a brilliantly designed underground pipeline built to minimize possible cross-contamination.

So things are going to get very wild at BrewDog’s Overworks soon… and we can’t but be interested in where this thing goes.
