, New Sourdough Bread Beer Brewed In Singapore

A craft brewery in Singapore has teamed up with bakery chain to brew a beer made with unused bred and a bread baked with spent grains from the brewing process.

Brewerkz, a local craft beer brewery in Singapore has joined forces Baker & Cook, a local bakery chain, to craft a beer made with surplus bread and a sourdough bread using grains from the brewing process.

Brewerkz EarthBrew Sourdough Pale Ale is the beginning of a sustainable roundabout that starts with a beer made with leftover bread and ends with a special recycled brewing grain bread that in turn could lead to more beer.

, New Sourdough Bread Beer Brewed In Singapore“We were looking to expand on this series of sustainable beer and had in mind to work with a bakery to use their surplus bread to make a beer, and for the bakery to make a bread using spent grains from our brewing,” Wee-Tuck Tan, co-owner and managing director of Brewerkz told the Drinks Business. …

“Baker & Cook was a natural choice as they are a well-known local artisanal bakery, and a local brand like us. When we shared the idea with them, they embraced it very quickly because they were already thinking about the same kind of collaboration.”

Surplus bread is collected from supermarkets, toasted and mixed in with the grain bill before the brewing process begins.

Approximately 180 kilograms of surplus sourdough bread is used for every 2,500 litters of beer and the toasted sourdough makes up 20% of the beer’s grain bill.

Baker & Cook NEWGrain+ Sourdough Bread is baked using 30% of the spent brewing grain as part of the loaf’s flour mix.

In 2002, Brewerkz joined forces with Singapore’s national water agency, the ironically named PUB, and crafted a beer they claim proves that “sustainability can be delicious,” even when the water used comes from a toilet bowl.

Brewerkz, NEWBrew was made with NEWater, which is Singapore’s brand of clean, high-quality water, a liquid which is recycled from sewage, filtered, and pumped into Singapore’s water supply.

Brewerkz second “Sustainable Series” release was a certified carbon neutral beer called the Islander Brew made in collaboration with Sentosa, an island resort off Singapore’s southern coast.

“This is our third sustainable beer collaboration,’ Wee-Tuck Tan added, and our first sustainable food product using brewers’ spent grains,”
