In September of 2023, Edinburgh, Scotland-based, Vault City Brewing shocked the brewing industry by releasing  “the sourest beer ever,” and the world has never been the same.

According to the brewery the sour ale Vault Dweller was inspired by Toxic Waste, a super sour candy that was popular in the UK between 2000 and 2009.

It’s a “triple sour hit of lemon and lime juice paired with a sour beer base, “Vault City co-founder Steven Smith-Hay, told the Drinks Business

Vault City bills itself as the home of “Modern Sour Beers” and clearly, they are all about them, if you’re looking for an IPA best go somewhere else.

We like to celebrate all the rich diversity within craft beer, and while this might not be everyone’s cup of tea, this style has carved out a unique space for exploration and creativity that helps open up the category to consumers who haven’t previously enjoyed beer.”

The beer was brewed to both celebrate “International Sour Day” (September 20) and since Toxic Waste candy was once a Halloween staple also be available for that holiday.

“At the heart of our beer is the same unique mixed fermentation house culture that’s been propagated and utilized in every Vault City release since the brewery started, and that base beer is full of tropical, sherbet-like flavors that lend themselves perfectly to this type of nostalgic release.”

At a time when the popularity of sour ales are waning in the US, the category is on an upswing in the UK.

“The sour beer category is growing massively in terms of popularity, and we’re out put our unique stamp on it,” Smith-Hay added. “It may not be terribly traditional, but it’s a tried and tested formula that’s proved by the success of our sour beers – one in three sour beers drunk in the UK will be one of ours.”
