Super Bowl Brats & Knocks in Beer (H/T Cookpad)
Ingredients:
- 6 Bratwurst or Knockwurst
- 1 large Vidalia onion
- 16 oz can of beer
- 1 salt & pepper to taste
- 6 small rolls
Steps:
- Grill the sausages until half cooked & have grill marks.
- In a small pot add the beer & sliced onion & simmer until onions are soft
- Add the sausages & salt & pepper & let simmer for 15 minutes
- Slightly heat the roll then add a sausage & some onions wet to absorb into the roll Add mustard
Super Bowl Beer & Cheese Fondue (H/T Serious Eats)
Ingredients:
- 1 pound Medium Sharp Cheddar
- 2 1/2 tablespoons cornstarch or all-purpose flour
- 3/4 cup (or more) of your favorite high octane Stout
- 6 tablespoons Apple cider
- 1 tablespoon Dijon mustard
Steps:
- Toss grated cheese with cornstarch/flour in large bowl.
- Bring 3/4 cup stout, juice concentrate, and mustard to simmer in large saucepan over medium heat.
- Gradually add cheese (a handful at a time), stirring with a wooden spoon, until cheese is melted and smooth, thinning with more stout if desired. Wait until each handful of cheese melts before adding the next.
- Season to taste with salt and pepper.
- Remove the saucepan from the heat and place over an alcohol safety burner set on a table. Adjust the burner flame so the fondue continues to bubble gently. If the fondue boils too vigorously, it may separate or seize up.
Beer Brownies (H/T I Am Baker)
Ingredients:
- 1 1/2 cups (188g) unbleached all-purpose flour
- 1/2 cup (64g) unsweetened cocoa powder
- 1 tsp. espresso powder
- 1/2 tsp. kosher salt
- 3 large eggs room temperature
- 1 1/2 cups (300g) sugar
- 1 tsp. pure vanilla extract
- 1/2 cup (4 ounces or 118 ml) canola oil
- 4 tbsp. unsalted butter melted
- 1/2 cup (4 ounces or 118 ml) beer – IPA, Brown Ale or Stout
- 1 cup (8 ounces) semisweet chocolate chips
Steps:
- Preheat the oven to 350°F. Spray a 9×9 baking pan and line with parchment paper. Make sure the paper goes up over the sides, this will help with easy removal.
- Whisk the flour, cocoa powder, espresso powder, and salt in a large bowl. In a separate bowl, whisk the eggs, sugar, vanilla, and canola oil.
- Add the dry ingredients to the egg mixture and stir well to combine.
- Mix in the melted butter and beer, stirring until just combined.
- Stir in the chocolate chips. Reserve a few for the top. Try to not overmix brownie batter.
- Pour the batter into the prepared pan and cover with remaining chocolate chips.
- Bake 30–32 minutes until the brownies are slightly firm to the touch.
- Cool in pan for 5 minutes then remove and set on wire rack to cool completely. (Although they are fantastic warm!)
