Festive treats take on new meaning as we approach the winter holidays, especially treats made with serious craft beer.
And this holiday fruitcake is as traditional as it is tasty!
This recipe comes our way from Chico, California-based Sierra Nevada Brewing and it uses the brewery’s Celebration IPA, a 6.8 % ABV Fresh Hop India Pale Ale, that’s widely available during the holiday season.
For many Sierra Nevada’s annual Celebration release marks the official start of the winter holidays and given that you’ll have some left over, it’s also the perfect companion while you’re cooking.
Sierra Nevada Celebration IPA Fruitcake
Ingredients
1 box (15.25 oz) spice cake mix
1 cup Celebration Fresh Hop IPA
1/2 cup vegetable oil
3 eggs
1.5 cup nuts (chopped walnuts, pecan halves)
2.5 cups dried fruit (cherries, raisins, chopped dates, chopped pineapple)
Directions
Step 1
Preheat oven to 300°F. Lightly grease two 9×5-inch loaf pans and line them with parchment.
Step 2
Combine nuts, dried fruit, and flour in a large mixing bowl. Toss well to coat evenly.
Step 3
In another large mixing bowl, combine spice cake mix, Celebration IPA, vegetable oil, and eggs. Beat for 3 minutes. Fold in fruit-and-nut mixture.
Step 4
Pour batter evenly into loaf pans and bake for 90 minutes, or until a toothpick inserted in the center comes out clean.
Step 5
Let cool in pan. When cakes are completely cool, wrap them tightly in plastic wrap and store at room temperate
