Sustainability is a passion for San Diego’s Pure Project, and they’ve just hit a benchmark worth celebrating. We’ve that “Words to Drink By” and more.
Pure Project Recaptures 74,500 Pounds Of CO2
San Diego’s Pure Project Brewing has reached an impressive sustainability milestone, recapturing more than 74,500 pounds of CO2 since installing an on-site carbon recovery system in February.
The system, developed by Denmark-based Dalum Beverage Equipment, captures CO2 naturally produced during fermentation rather than allowing it to escape into the atmosphere. The gas is then cleaned, condensed and reused for brewing and serving beer.
Since February, Pure Project has recovered approximately 34,000 kilograms of CO2, or more than 74,500 pounds. According to the brewery, that reduction is equivalent to the emissions generated by burning nearly 3,850 gallons of gasoline.
The technology also reduces Pure Project’s dependence on commercially produced CO2, eliminating some of the emissions associated with producing and transporting the gas to the brewery.
“Running a true closed-loop system in our own brewery has been a long-time goal of ours,” said Pure Project co-founder and brewer Winslow Sawyer.
Founded in 2015, Pure Project operates multiple taprooms in San Diego and has made sustainability a central part of its brewing philosophy. The brewery is also a member of 1% for the Planet, an organization whose members commit at least 1% of annual sales to environmental causes.

Bitburger Launches Gluten-Reduced Lager In The US
Germany’s Bitburger Brewery is expanding its US portfolio with the launch of Bitburger Gluten-Reduced Lager, a beer that has been available in Europe since 2020.
The 5.1% ABV lager is brewed with barley using traditional brewing methods, but a special enzyme is added during fermentation to break down gluten proteins. The finished beer is then tested to ensure gluten levels are below 20 parts per million.
Because barley is still used in the brewing process, Bitburger labels the beer gluten-reduced rather than gluten-free. The brewery notes that people with celiac disease or severe gluten sensitivity should consult their physician before drinking gluten-reduced beer.
Bitburger describes the lager as finely malty, balanced and hoppy with a pleasantly full-bodied character.
Founded more than 200 years ago, Bitburger remains one of Germany’s largest privately owned breweries. Bitburger Gluten-Reduced Lager is brewed at the company’s brewery in Bitburg, Germany, and is available now in the US in 11.2-ounce cans sold in six-packs and cases.
