Festive foods take on new meaning when made with serious beer. And who doesn’t like cheese spread, especially pimento cheese spread made with the right beer?
This tasty recipe comes from Founders Brewing whose first brewery and taproom (they’ve another brewhouse now in Detroit) is nestled in downtown Grand Rapids, Michigan. The original recipe was made with the brewery’s PC Pils (see above) which has been discontinued. So we substituted Founders Solid Gold, a 4.4% ABV Premium Lager that is currently available year-round.
This delicious spread is easy to make and perfect for 4th of July entertaining.
So let’s do this!
Founders Solid Gold Premium Lager Pimento Cheese Spread
Ingredients
1 lb sharp orange cheddar cheese
1- 4-ounce jar diced pimentos, drained
2 garlic cloves
1 tablespoon Worcestershire sauce
½ teaspoon kosher salt
1 teaspoon smoked paprika
2 teaspoons hot sauce
½ cup PC Pils
Directions
Step 1
Cut the cheese into small chunks and put into the bowl of a food processor.
Step 2
Add the garlic, Worcestershire sauce, salt, paprika, and hot sauce to taste and process just until it starts to break up and form a paste.
Step 3
Scrape down the sides of the bowl, then start the food processor and drizzle in ½ cup of Solid Gold Premium Lager, and incorporate the pimentos until the mixture is smooth and creamy.
Step 4
Scrape the beer cheese into a container, cover, and refrigerate for 2 hours, or until the cheese is firm and the flavors have melded.
Step 5
Serve cold along with your favorite artisan crackers. We recommend whole wheat crackers with crushed pepper. And crack open another Solid Gold Premium Lager!
The beer cheese will keep, covered, in the refrigerator for one week.
