Cooking with Beer: Founders Peach IPA Sorbet

Summer desserts take on new meaning when made with serious beer. And who doesn’t enjoy a tangy dish of citrusy sorbet, especially when it’s are with the perfect India Pale Ale?

Widely available all year-round, Founders All Day Peach IPA is a natural fit for this sorbet. The beer brings bright peach character, citrusy hops and a crisp finish without the heavier malt sweetness that can make a frozen dessert feel cloying. And at 4.7% ABV, it also delivers enough beer character to remain noticeable after freezing.

The trick when making sorbet with beer is not overdoing it. Alcohol lowers the freezing point, so too much beer can leave you with a boozy peach slush rather than something you can actually scoop. This recipe uses enough All Day Peach IPA to make its presence known while still allowing the sorbet to set properly

So let’s do this!

Founders All Day Peach IPA Sorbet

Ingredients

2 cups ripe peaches, peeled, pitted and chopped
3/4 cup Founders All Day Peach IPA
1/2 cup granulated sugar
1/3 cup water
2 tablespoons fresh lemon juice
1 teaspoon finely grated lemon zest
Pinch of salt

Directions

Step 1

Combine the sugar and water in a small saucepan over medium heat. Stir until the sugar has completely dissolved, then remove from the heat and allow the simple syrup to cool.

Step 2

Add the peaches, cooled simple syrup, lemon juice, lemon zest and salt to a blender or food processor. Purée until completely smooth.

Step 3

Pour the mixture into a bowl and slowly stir in the Founders All Day Peach IPA. Adding the beer at the end preserves more of its fresh peach and hop character while minimizing the foam.

Step 4

Cover and refrigerate the mixture for at least two hours, or until thoroughly chilled.

Step 5

Pour into an ice cream maker and churn according to the manufacturer’s directions, usually about 20 to 25 minutes. Transfer the sorbet to a freezer-safe container and freeze for another 3 to 4 hours until firm enough to scoop.

Step 6

No ice cream maker? Pour the chilled mixture into a shallow metal pan and freeze, stirring vigorously with a fork every 30 to 45 minutes for roughly three hours. The texture won’t be quite as silky, but it will still get the job done.

Step 7

Serve the sorbet in chilled bowls or glasses and garnish with a thin slice of fresh peach. And because you’ve already opened a Founders All Day Peach IPA, pairing the rest alongside this fresh fruity sorbet is the responsible thing to do.
