Festive foods take on new meaning when made with serious beer. And who doesn’t like spicy grilled steak tacos when it’s made with an expertly crafted, super-hoppy India Pale Ale?
This tasty recipe uses Sierra Nevada’s bestselling Torpedo Extra IPA, an aggressive yet balanced 7.2% ABV India Pale Ale with a complex citrus, pine, and herbal character of whole-cone hops.
And the beer (which is widely available) really adds something special to the fiery habanero and jalapeño mix used to marinate the steak.
This dish rocks in the kitchen but on the backyard grill, even better.
So let’s do this!
Sierra Nevada Fiery Torpedo IPA Steak Tacos

1/2 cup Torpedo Extra IPA
3 habanero peppers, cored, deseeded & minced
2 jalapeño peppers, cored, deseeded & minced
1/3 cup orange juice
3 tablespoons brown sugar
2 teaspoons garlic powder
1 teaspoon salt
1/4 cup olive oil
1.5 pounds flank steak
10–12 corn tortillas
Onion, cilantro & lime to garn
Directions
Step 1
Whisk together Torpedo, habaneros, jalapeños, orange juice, brown sugar, garlic powder, salt, and olive oil in a large mixing bowl.
Step 2
Place flank steak in a large, non-reactive* bowl or dish. Pour marinade over steak, cover, and marinate in refrigerator for at least 2 hours, up to overnight. Turn occasionally for even marinating.
Step 3
Remove steak from refrigerator and prepare a grill for direct medium-high heat. Grill steak for 6 minutes per side for medium-rare. Let rest before slicing and serving on tortillas topped with onion, cilantro, and freshly squeezed lime juice.
*Such as stainless steel, ceramic, or glass. Ensures no metallic off-flavors affect your steak.
