, Cooking With Beer – Celebration IPA Stuffed Turkey Breast

Festive dishes take on new meaning when they are made with serious craft beer.

This hearty and healthy recipe comes our way from Chico, California-based Sierra Nevada Brewing and it uses the brewery’s Celebration IPA, a 6.8 % ABV Fresh Hop India Pale Ale with hop tones that vary from year to year.

For many the annual arrival of Sierra Nevada’s annual Celebration IPA marks the official start of winter. This distinctive IPA is widely available throughout the holidays, but it is a limited release, and won’t be around forever.

It’s also the perfect companion while you’re cooking.

So let’s do this!

Sierra Nevada Celebration Stuffed Turkey Breast

Ingredients

  • , Cooking With Beer – Celebration IPA Stuffed Turkey Breast1 cup Celebration IPA
  • 1 boneless turkey breast, about 2 pounds
  • 3 tablespoons unsalted butter
  • 1 medium onion, diced
  • 2 carrots, peeled and chopped
  • 1 apple, peeled and diced into 1/4-inch cubes
  • 1 teaspoon fresh sage, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon parsley, chopped
  • 1 teaspoon fresh thyme, chopped
  • 4 cups bread, torn into bite-sized pieces
  • 1/2 cup dried cranberries
  • 1 tablespoon olive oil
  • Kosher salt and freshly ground black pepper

 

Directions

Step 1

Leave torn bread pieces out overnight to dry, then bake for 20 minutes at 200° F.

Step 2

Heat oven to 350° F. Melt butter in a large skillet over medium heat. Add onion and carrots, cooking until onions are slightly browned, about 10 minutes. Add apple, sage, rosemary, parsley, and thyme. Cook for 5 minutes. Remove skillet from heat.

Step 3

In a large mixing bowl, combine onion mixture with bread, cranberries, and Celebration IPA. Season with 1 teaspoon salt and about 1/2 teaspoon of black pepper. Mix well and spread out on a parchment-lined baking sheet. Bake for 30-40 minutes, until bread is golden brown. Let cool.

Step 4

Heat oven to 400° F. Butterfly-cut the turkey breast, place skin-side down, and pound to 1/2-inch thickness. Season with salt and pepper and drizzle with olive oil. Spread stuffing on top and carefully roll turkey around the stuffing. Wrap kitchen twine around the turkey breast, and tie tightly.

Step 5

Place turkey in a roasting pan, drizzle with olive oil, and season with salt and pepper. Roast for 20 minutes, then lower the heat to 325° F for an additional 10-15 minutes of roasting, until the internal temperature of the breast reads 155° F on a meat thermometer.

Step 6

Remove from heat and let rest for at least 10 minutes. Slice and serve with gravy.
